Looking for quick and easy recipes that are not only delicious but healthy? This book is a must read! Brandi Doming, creator of the Vegan 8 blog, brings a cookbook to readers that is packed with fully-photographed recipes and all of them require only 8 ingredients or less (spices included!). I can personally say that the Hungarian Red Lentil Soup is incredibly tasty. I make a double batch at least three or four times a month! I had no idea that one of my favorite recipes (that I randomly got from a friend) came from this author, but now that I do I'll be happily cooking away after checking out this cookbook!
